Recipe for iced tapioca cake with condensed milk

The combination of tapioca, condensed milk and grated coconut makes for a delicious dessert called tapioca cake or tapioca couscous, do you know? This is a gluten-free cake that does not go in the oven, only on fire to mix the ingredients and then in the fridge to set. It is very popular at Festas Juninas and is worth preparing all year round!

Here I share with you this recipe for iced tapioca cake with condensed milk that has been in my family for two generations. It is always prepared by my grandma to celebrate birthday parties and other occasions when we get the whole family together. That's why this grainy tapioca cake is so special to me!

Ingredients for making iced tapioca cake with condensed milk:

 250 grams of granulated tapioca

 ½ liter of whole or skimmed milk

 200 grams of condensed milk

 50 grams of grated coconut

 2 tablespoons of sugar

How to make iced tapioca cake with condensed milk:

Bring the milk to the fire until it starts to boil and turn off. While stirring, add the tapioca, condensed milk, coconut and sugar. Keep stirring until everything is well mixed.

Tip: Keep an eye on the milk as it rises and overflows quickly after it starts boiling. The tapioca used in this recipe is granulated tapioca, similar to sago - not to be confused with the tapioca used to make tapioca in the pan.

Grease a pudding tin with oil or margarine and pour the simple tapioca cake mixture prepared in the previous step into it. Allow to cool and set aside in refrigerator for 2 hours or until set.

Tip: Press the tapioca mixture well into the mold, so that it becomes compact and does not fall apart when unmolding.

And your creamy tapioca cake without an oven is ready! Simple as that and a delight. It has a pudding-like consistency but firmer. Try it and I'm sure you'll like it. Enjoy your food!
